Location: Valpolicella Valpantena, Controlled Designation of Origin
Grapes: Corvina, Rondinella, Molinara
Average production: 21 hl per hectare
Vineyards: Owned vineyards from Valpantena: hamlets of Poiano, Quinto and Santa Maria in Stelle
Characteristics of the vineyards: Located in a hilly position with southern exposure, highly calcareous clay soil. The systems are Gujot with a density of 4500 plants per hectare and partly pergola with 3000 plants per hectare
Winemaking and Aging
Harvest: Carried out by hand in small crates in the third ten days of October
Vinification: It is carried out after drying for 120 days in our fruit cellar with a weight loss of 55%. The pressed grapes fall by gravity into small 50 hl stainless steel vats. Daily pumpovers and delestages are carried out throughout the entire fermentation period
Temperature: controlled at 18 – 20°C
Aging: aging for 24 months in French oak and 6 months in the bottle
Tasting Notes
Organoleptic characteristics: dark ruby red colour, presents with gentle notes of ripe red fruit, hints of spices and leather, full-bodied, enveloping, soft, of rare elegance and long persistence
Pairings: suitable with game second courses, horse meat strips and a wonderful companion with mature cheeses or at the end of a meal
