Location: Valpolicella Valpantena, Typical Geographical Indication

Grapes: 100% Cabernet Sauvignon

Vineyards: Owned vineyards from Valpantena between the hamlets of Poiano and Quinto in the Figaretto area

Characteristics of the vineyards: Located in a hilly position with southern exposure, highly calcareous clay soil. The plants are in Gujot with a density of 5000 vines per hectare

Winemaking and Aging

Harvest: Carried out by hand in small 5 kg crates in the second ten days of October

Vinification: 50% of the grapes are harvested, the perfectly healthy and ripe bunches are left to dry naturally in our fruit cellars for approximately 20 days, the other half is left to over-ripen on the live shoot plant for approximately 20 days, after this period is pressed together with that placed in the fruit cellar and the must descends by gravity into stainless steel tanks where it slowly begins to ferment for approximately 20 days at temperatures not exceeding 22 degrees. Daily pumpovers and delestages are carried out throughout the entire fermentation period

Tasting Notes

Maturation: aging for 12 months in French oak and 6 months in the bottle

Organoleptic characteristics: dark ruby ​​red colour, it has notes of jam, delicate and inviting aromas of spices and undergrowth with a splendid expression of persistence, the soft and dry flavor with dense, sweet and elegant tannins

Pairings: ideal with red meats, game, long-matured cheeses

Alcohol: 15% Vol.
