Location: Vallpantena, Controlled Designation of Origin
Vineyard: Altarol
Grapes: Corvina, Rondinella, Molinara, Oseleta, Corvinone and Croatina
Vineyards: Owned vineyards from Valpantena between the hamlets of Poiano and Quinto in the Figaretto area
Characteristics of the vineyards: Located in a hilly position with southern exposure, clayey, highly calcareous soil. The plants are in Gujot with a density of 4000 vines per hectare
Winemaking and Aging
Harvest: Carried out by hand in small crates in the third ten days of September
Vinification: The pressed grapes fall by gravity into small 50-hectolitre stainless steel vats. Daily pumpovers and delestages are carried out throughout the duration of fermentation. Temperature controlled at 28°C
Tasting Notes
Maturation: The peak of refinement is reached approximately two years after the harvest
Organoleptic characteristics: Dark ruby red color with violet reflections. Very intense aroma of cherry, plum, blackberry and violet; natural characteristic of Valpantena. Notes of coffee, hay and dark chocolate. The flavor is dry and persistent
Pairings: Ideal pairing with pasta dishes, red meats, fresh or medium-aged cheeses
